Hazel Nut Cake and Carmel Frosting

This recipe was passed down to me from my mother. I think she got it from a friend.

Cake batter
    2 cups sugar
    1 1/2 sticks of butter
    1/4 cup shortening (crisco, for instance)
    4 egg yolks
    4 egg whites
    1 1/2 teaspoons vanilla
    2 2/3 cups cake flour
    1 1/2 teaspoon baking powder
    1/2 teaspoon salt
    1 cup milk
    1 cup hazel nuts, finely chopped (I put them in the food processor so they were very fine

Cream butter, shortening, and sugar. Add egg yolks. Sift all the dry ingredients together and add alternately with the milk and vanilla. Fold in 1 cup nuts. Beat egg whites and fold in the batter. Grease and flour three 8 inch cake pans. For a tube pan bake 1 hour. For layer pans bake 30 to 35 minutes at 350 degrees.


Carmel Frosting
    2 cups brown sugar
    1 stick butter
    3 tablespoons shortening (crisco, for instance)
    pinch of salt
    1/2 cup milk
    1 cup powdered sugar

Cook first 5 ingredients over low flame til soft ball is formed. Mix with powdered sugar. Frost the cake.
