Pineapple Upside Cake

This one brings back memories. My mom use to make this cake. Pineapples are not my most favorite fruit but this cake is delicious.
    1 cup brown sugar
    4 tablespoons margarine or butter
    1 can of pineapple rings
    small jar of maraschino cherries
    2 eggs, separated
    1 cup sugar
    1/4 teaspoon salt
    5 tablespoons juice from the can of pineapples
    1 cup flour
    1 teaspoon baking powder

Preheat oven to 350 degrees. Melt the margarine/butter in a pan add the brown sugar and stir evenly. Lay complete wheels of pineapple on top of the brown sugar mixture. Place a cherry in the center of each pineapple. Beat the two egg yolks, add 1 cup of sugar, 1/4 teaspoon salt, and the pineapple juice together. Add the flour and baking powder. Fold in stiffly beaten egg whites. Pour the mixture over the fruit. Bake 45 minutes to 60 minutes.
